Ciavolich “Fosso Cancelli” Trebbiano d’Abruzzo DOP (2019)
Grapes from the oldest vineyard are picked by hand and pressed. Fermentation happens spontaneously with indigenous yeasts, preparing a “pied de cuve” selecting the most mature grapes after the harvest. From 2018 Trebbiano Fosso Cancelli is produced in terracotta anphora and in Slavonian oak barrels, 2500 bottles produced. A warm bouqet, aromas of citrus, white flowers and aromatic herbs enhance the freshness.
Suggested pairings : smoked fish appetizers, ravioli filled with sheep’s milk ricotta seasoned with porcini mushrooms and truffle flakes, grilled fish, game marinated in Trebbiano, aged cheeses.

Sant’Agnese “L’Etrange” Vermentino Toscana IGT (2019)
The Gigli Family became owner of the estate in 1994, buying the property from Acciaierie in Piombino, the estate Sant’Agnese is located in the middle of the promontory of Piombino, a particular area with a special microclimate due to the presence of wind and mild temperatures all year long.
Grapes are obtained from 2 different clones of Vermentino, one coming from Corsica and the other one from Tuscany, in 2 different vineyards. Once clarified at 3/5° C, must ferments with grapes, without adding sulphites, spontaneously without temperature control. Grapes keep on maceration for 18 months than bottled without filtering or adding sulphites.

La Colombera Colli Tortonesi Timorasso DOC “Derthona” (2021)
From Timorasso grapes grown in clay clear and dark soil, Derthona is a long-lived white wine, even more than 10 years, with a gold intense yellow. AGed 9 months on skins in stainles steel vats.
Fruity aromas of peach, acacia and hawthorn flowers, cotton candy, honey and acacia notes. During the first months hydrocarbon and mineral notes are softer, they come out intense after ¾ years refinement in bottle.
