Vinification: “scaled” harvest from the first days of September with a slight advance on the ripening times in order to preserve satisfactory pH and acidity values. After the first pressing-destemming process, the must obtained was transferred into terracotta amphorae, Slavonian oak barrels and small steel vats to carry out the alcoholic fermentation spontaneously and, once the wine was obtained, the refinement on its lees for about one year. Afterwards the wine was bottled to continue the refinement in the bottle.
Tasting Notes of a beautiful golden yellow color, the nose is intense and complex with a bouquet with notes of citrus and white flowers and acacia combined with hints of aromatic herbs, sage and thyme in primis. On the palate it is fresh and sapid. Good taste-olfactory persistence.
Pairings: smoked fish appetizers, ravioli filled with sheep’s milk ricotta seasoned with porcini mushrooms and truffle flakes, grilled fish, game marinated in Trebbiano, aged cheeses.
