Winemaking: spontaneous fermentation with indigenous yeasts and maceration for 20 days in open wooden vats. Aging for 24 months in large oak barrels, followed by 6 months in concrete tanks.
Tasting Notes: ruby red in colour, on the nose it presents floral and red fruit aromas with balsamic notes of Mediterranean herbs. On the palate it denotes great structure and austerity, almost a Brunello, it is balanced with well-balanced tannins, with an important minerality and a long taste-olfactory persistence.
Pairings: ideal with game, first courses with meat-based sauces and mature cheeses.
