strong>Vine varieties: Sangiovese 100%
Winemaking: spontaneous fermentation with indigenous yeasts and maceration for 20-25 days in open wooden vats. Initially, 80% of the fermentation is accompanied by open pumping over while the final part takes place with a submerged cap (Piedmontese). Aging for 30 months in large oak barrels, followed by 12 months in concrete tanks.
Tasting Notes: bright garnet red in colour, intense on the nose with fruity aromas of blackberries and plums and floral aromas of fresh violets with balsamic notes, aromatic herbs and hints of undergrowth. On the palate it expresses itself extremely fresh, intense, complex, with very elegant tannins, with a marked taste of berries and black cherries and with a balsamic, persistent and savory finish.
Pairings: ideal with game, first courses with meat-based sauces and mature cheeses.
