Grape Variety: Chardonnay 85%, Grechetto 15%
Vinification: The vinification cellar is built to take full advantage of the principle of gravity, allowing the grapes to be handled and macerated without mechanical interventions such as pumping. The grapes are harvested in the very early hours of the morning to ensure that the fruit reaches the cellar intact and unharmed by the higher temperatures of the day. The must, obtained from maceration of the grapes on the skins at 10°C for approximately four hours, is transferred by gravity to settling tanks where it clarifies before being transferred to barriques where alcoholic fermentation, followed by malolactic fermentation, takes place. In February, the Chardonnay is ready to be transferred back to stainless steel to blend with the Grechetto, which is vinified separately in the “absence” of oak. The Cervaro della Sala then ages for several months in the bottle.
Tasting Notes Bright yellow in color with green highlights, the nose is intense and complex, with a bouquet of citrus and acacia flowers combined with hints of chamomile and flint. On the palate, it is mineral and savory, characterized by light notes of hazelnut butter, tropical fruit, and vanilla. The finish is long and persistent.
Pairings: Perfect with sea urchins and bulot, excellent with fish dishes and white meats in sauces.
