Banfi Cuvée Aurora Riserva 100 Mesi Alta Langa DOCG (2011)

Grapes: Pinot Noir and Chardonnay.
Winemaking: fermentation in the bottle according to the Classic Method with subsequent refinement in the bottle on the yeasts for at least 100 months.
Tasting notes: straw yellow in color with golden reflections, fine and very persistent perlage, intense on the nose with hints of candied citrus peel and aromas of brioches, dried fruit and vanilla. In the mouth it is a wine with great structure, austere and elegant, which is characterized by a marked flavor and a notable taste-olfactory persistence.
Pairing: excellent with fish-based dishes, raw and cooked, with complex preparations and elegant but strong flavours.
