Vinification: Harvested by hand in small crates after rigorous selection. Fermentation and maturation take place entirely in stainless steel – at low temperatures, on the fine lees, and with regular agitation. Aged in bottle for several months.
Tasting Notes: Straw yellow in color with green highlights, the nose is complex and expresses citrus aromas of bergamot, fruity notes of green apple, white peach, and gooseberry, floral notes of white flowers, herbaceous notes of mint, and mineral and iodine notes. On the palate, it is fresh and mineral, full-bodied with a long finish.
Pairings: Ideal with fish and shellfish dishes, excellent with white meats, asparagus, and mushrooms.
