Tuscan tomato bread soup “Pappa” is a first tuscan course from the farming cooking. Prepared with easy and healthy ingredients, it is a dish made with stale bread, tomatoes, garlic, basil and Evo olive oil.

Cut tomatoes and brown garlic in a pot with extravirgin olive oil for about 2 minutes. Take off the garlic, add tomatoes and cook for few minutes and cover it. Add salt and pepper at your preference.
In the meantime cut the tuscan bread in small pieces add it to tomatoes, adding some hot soup. Blend it frequently until the bread will be completely overripe. If the Pappa is too dry just add a little bit of lukewarm soup.
Let the pappa rest few minutes and garnish with fresh basil and extravirgin olive oil.
