Vinification : maceration in cement on the skins for at least 48 hours with fermentation without added selected yeasts and without temperature control. The must completes the fermentation in exhausted barriques. At the end of October the wine is transferred together with its lees, in 50% exhausted and 50% new barriques from Burgundy. Two weekly batonages are carried out to give body, structure and aromas to the wine. This is followed by a light clarification carried out with certified organic natural products. The wine then returns to concrete for a natural decantation. It is bottled without filtration, during the waning moon by fall.
Tasting Notes : bright golden yellow in color, the nose is intense and complex with floral, herbaceous and yellow fruit notes and hints of sweet spices, vanilla and honey. On the palate it is full-bodied, complex, soft with fruit aromas, with a long and persistent finish.
Pairings: perfect with starters and fish-based first courses, stewed white meats
