Grape Varieties: Cabernet Franc, Cabernet Sauvignon, Sangiovese
Aging: Fermentation in truncated cone-shaped tanks where the must was macerated with great attention to preserving the aromas, extracting color, and managing the sweetness and elegance of the tannins. Racking is carried out only after careful daily tastings. Malolactic fermentation then begins in barriques to enhance the finesse and complexity of the aromas. Aged in French oak barrels, with a very small portion in Hungarian oak, mostly new, for a total period of just over 13 months. After initial aging in separate lots, these were blended to complete the evolution in wood. Aged for a further 12 months in bottle.
Tasting Notes: Intense ruby red in color with purple highlights, the nose reveals fruity aromas of cherry, ripe black cherry, and pomegranate seeds, floral notes of violet, with balsamic hints and spicy notes of vanilla and cotton candy. On the palate, it recalls the notes perceived on the nose with great sincerity, integrated with tannins of great finesse, freshness, and savory flavor. The finish is long and persistent.
Pairings: Perfect with truffle and game dishes, excellent with grilled meats and structured main courses.
