Vinification : drying on oak barrels in a ventilated area for 3-4 months. Soft pressing, slow spontaneous fermentation several times in used chestnut kegs. Aging up to 10 years in the same containers.
Tasting Notes : a beautiful amber yellow color on the nose expresses hints of honey, chestnuts and caramel, with a dry fig finish. In the mouth it is sweet, fresh, with great persistence.
Pairings: ideal with classic cantucci
