Grapes: Sangiovese 100%
Vinification : The grapes are harvested by hand in small boxes lined with vine leaves and spread on bamboo mats where they remain to dry for a few months. After a gentle pressing, the must is transferred to the kegs for a slow and natural fermentation, with the addition of indigenous yeast, called “mother”, where it remains to age for 10 years.
Tasting Notes : a beautiful amber color on the nose reveals a complex bouquet with aromas of prunes and dates, propolis, gingerbread, malaga and tobacco. In the mouth it is sweet, spicy. The olfactory notes are integrated with those of dried apricots and smoked hazelnut with hints of Christmas spices. The taste-olfactory persistence is very long.
Pairings: excellent with cheeses and desserts in general
