Grape Varieties: 50% Merlot, 30% Cabernet Sauvignon, 10% Cabernet Franc, 10% Petit Verdot
Vinification: The organic grapes are harvested by hand, placed in 15-kg aerated crates. Vinification takes place over 20 days in stainless steel and concrete truncated cone-shaped vats at 28°C, each variety being fermented separately. The use of indigenous yeasts allows for the preservation of the varietal aromas and fragrances. The wine is then aged in French oak barriques for 18 months: initially, each variety ages individually, then the blend is created.
Tasting Notes: Bright ruby ​​red in color with purple reflections, the nose expresses fruity aromas of cherry, blackberry, and berry jam, with spicy and toasted notes, and hints of dark chocolate and ebony. On the palate, it presents a fine, silky, slightly powdery tannic texture. It is full-bodied and ample, with a good balance between freshness and savory flavors, minerality, and a long finish.
Pairings: Perfect with game dishes, excellent with grilled red meats and aged cheeses.
