Grapes : 100% Riesling
Vinification : selected grapes harvested at the peak of maturation in several passages, after a short period of maceration lasting between 3 and 6 hours, the grapes are pressed slowly and the must is left to settle overnight and then fermented using locally produced yeasts. The raw and untreated wine is left to mature on the lees and fine lees both in stainless steel vats and in large traditional wooden barrels, until bottling
Tasting Notes : the nose expresses vegetal and herbaceous notes, acidulous yellow fruit with floral and black berry scents, smoky and delicate notes of pepper. Ripe fruit, very juicy, firm and dry on the palate, creamy, slightly nutty, traces of butter, vegetal and herbaceous notes, dominant mineral notes, spicy, calcareous and salty. On the palate it is elegant, fresh with ripe tannins. Excellent on the finish, decisive and persistent. It needs time to mature and be appreciated at its best.
