Grape Varieties: 100% Sauvignon Blanc
Appellation: Bolgheri DOC Bianco
Vinification: Hand-harvested in 15-kg crates in the early morning and immediately chilled upon arrival at the cellar, selection, soft pressing with maximum attention to protection against oxidation, static decantation for approximately 24 hours, alcoholic fermentation at temperatures no higher than 20°C in wood, 30% new and 70% used, including 225-liter barriques, 320- and 600-liter cigars, and tonneaux. No malolactic fermentation. Aged for 10 months on the lees with periodic bâtonnage, blending of the various lots, and light clarification. Aged in bottle for 20 months.
Tasting Notes: Straw yellow in color with greenish reflections, the nose expresses a complex bouquet of exotic fruit, floral notes of peach blossom, citrus notes of lemon peel, and hints of toasted hazelnut. On the palate, it is soft, fresh, savory, and mineral, with great balance and a long, persistent finish.
Pairings: Ideal with baked fish, perfect with fish dishes in general.
