Grape variety : 100% Sangiovese
Fermentation : Fermentation takes place in stainless steel tanks, with a short initial period of cold maceration (below 20 ° C) with the skins for about 15-20 hours, followed by maceration at temperature higher controlled which can last up to 20 days.
Maturation : the wine matures in oak for about 24 months and after bottling it is aged in the temperature-controlled cellars of Castello Romitorio for another 12 months before being released
Refinement : 12 months in the bottle before being put on the market
Notes of Desgustation : high nose of oak and fruit with accents of cherries, violets and pomegranate, with hints of earth and, with aging, hints of sage and soy. The tannins are deeply intertwined in the body, firm but fine, giving great structure, a skeleton from which the fruit, oak and aromas can fully express themselves. Tertiary notes of leather and herbs, persistence and aroma are lasting.
