Grapes : 100% Sangiovese
Vinification : Manual selection of the bunches before de-stemming and selection of the grapes with optical selector. Spontaneous fermentation follows without the use of added yeasts and maceration assisted by frequent punching down. Everything takes place in cone-shaped steel vats at a controlled temperature for 18 days.
Aging : 18 months in cask
