Grapes: Malvasia 90%, Trebbiano 10%
Vinification : hand-picked grapes when perfectly ripe and naturally dried for about 120 days in a well-ventilated area. After pressing, the must is decanted into oak and chestnut barrels with a capacity ranging from 40 to 180 Lt., sealed and placed under the roof, in an environment subject to seasonal temperature variations. Here it ferments and rises slowly for 6 years, with evaporation of 40% of the initial content, with a final yield of vinsanto of 10-12% on the initial weight of the grapes. Before bottling, a drop by drop filtration in Dutch canvas colas is carried out. Aged 18 months in the bottle.
Tasting Notes : a beautiful amber color on the nose is intense with a complex bouquet composed of hints of dried fruit, raisins, dates, honey and smoky notes of maple syrup. In the mouth it is sweet but well balanced.
