Vine varieties: Sangiovese 100%
Winemaking: the vineyards are managed organically and biodynamically. The grapes come from the Pian Bassolino di Sopra vineyard which is located at altitudes of 370-390m with south-south-west exposure. At the time of harvest the average age of the vines was 19 years. All the bunches are checked in the vineyard before the harvest and directly when in doubt
eliminated. Immediately after harvesting, the grapes were destemmed and selected by hand, berry by berry, on the selection table. Thanks to this technique only healthy and ripe grapes reach the vat and this has among other things the important advantage that we do not need to add sulfur to the must. Spontaneous fermentation started already after 1 day reaching a
maximum temperature of approximately 30.5°C. This year the fermentation lasted about 21 days in total. The must remained on the skins, from entering the vat to racking, lasted 6 weeks. Subsequently, the young wine was aged in a 12.5hl oak barrel for 46 months. The malolactic fermentation took place immediately after the alcoholic one, still in the vat and on the
peels. We do not add yeasts or bacteria, enzymes or technological additives during the wine transformation phase.
Tasting notes It is complex on the nose, with aromas of rose, violet and small red fruit jam followed by spicy notes of black pepper, chocolate, vanilla, aromatic woods and ethereal hints. On the palate it denotes great structure, power, firm tannins which over time will become pleasant and silky, freshness, and a very long taste-olfactory persistence
Pairing: excellent with structured meat-based dishes
