The Fattoi company is located south of the municipality of Montalcino, in one of the most beautiful valleys, where the Ombrone and Orcia rivers meet.
Grapes: Sangiovese 100%
Vinification : Harvest at the beginning of October, manual harvesting, transport of the small boxes, de-stemming, fermentation in stainless steel tanks, fermentation temperature from 25 to 28 ° C, maceration for 15-20 days, racking and draining pomace, stripping and beginning of aging in steel in March-May. Aging partly in the tank and partly in the barrel.
Tasting notes: The wine is limpid, brilliant, ruby red in color; with the scent of small red fruits and light cherry. On the palate the wine is harmoniously dry, has vigor and freshness with good aromatic persistence. It is a ready-to-drink wine, particularly persuasive.
Pairings : wine to pair with medium-structured dishes such as: pasta dishes with meat, poultry, mushrooms or truffles sauce, compound risottos, second courses prepared with pork or veal sauce. Aged cheeses such as Tuscan pecorino.
