“In the almost 19 hectares of vineyards in Corte Pavone, Sangiovese is grown almost exclusively. The vineyard has a variety of exposures and soil qualities, all soils formed by the decomposition of original rocks, in particular galestro. These peculiarities allow us to produce Rosso di Montalcino, Brunello from selected vineyards and Spumante.
We analyze each single area of the vineyard individually, select the best grapes for each wine and to obtain exceptional quality. “
Grapes: Sangiovese 100%
Vinification: Manual harvest with manual and mechanical sorting, spontaneous vinification in steel at controlled temperature with mechanical pumping over, duration of vinification about 20 days with permanence on the skins, followed by an aging of 18 months in oak barrels of about 30 hl, and 18 months in 500-liter tonneaux
Tasting notes: Intense and brilliant ruby red with a slight garnet hue. Ready and open nose, with definite aromas of ripe cherries, pomegranate and plums, earthy tones in the background. Round and soft both at first glance and in full tasting, it shows off aromas of raspberries and blackberries, soft and robust tannins, envelops the palate.
Pairings: Roasted and stewed red meats, aged cheeses.
