Grapes Variety: 100% Sangiovese
Vinification and aging : Vinification in steel at a controlled temperature and fermentation with indigenous yeasts, long maceration of four weeks and then three years of aging in large Slavonian oak barrels (20 and 35 hl) for the overwhelming Small amount of wine and a small part in used 500lt French oak tonneaux.
Then the wine is naturally clarified by decanting in steel and left to rest for a minimum of 6 months in the bottle before being placed on the market.
