D\u00e9lestage halfway through fermentation.<br \/>\n<strong>Aging:<\/strong> Approximately 30 months in 500-, 700-, and 2,500-liter wooden barrels, followed by approximately 6 months in concrete and 18 months in bottle.<br \/>\n<strong>Tasting Notes:<\/strong> A beautiful, intense ruby \u200b\u200bred color with garnet hues, the nose presents a broad and complex bouquet with fruity aromas of black cherries, blackberries, and blood oranges, floral notes of violets and roses, with spicy, balsamic, and earthy notes.
