The wine remains here for the following refinement too: during this process indigenous yeasts, which are suspended by weekly batonnage, help harmonise the natural oxidation. The bottling process is carried out at the next Easter, the ageing on the lees goes on for at least 18 months at a natural and constant temperature. During this phase we carry out a process that consists in disassembling the stack of bottles and reassembling it, facilitating the development of evolving organoleptic characteristics.<br \/>\n<strong> Tasting Notes <\/strong>: bright golden yellow in color, it has a fine and persistent perlage. The nose is complex with a bouquet of ripe fruit, honey, custard and dried fruit with a hint of wood.
