The must completes the fermentation in exhausted barriques. At the end of October the wine is transferred together with its lees, in 50% exhausted and 50% new barriques from Burgundy. Two weekly batonages are carried out to give body, structure and aromas to the wine. This is followed by a light clarification carried out with certified organic natural products. The wine then returns to concrete for a natural decantation. It is bottled without filtration, during the waning moon by fall. <br \/>\n<strong> Tasting Notes <\/strong>: bright golden yellow in color, the nose is intense and complex with floral, herbaceous and yellow fruit notes and hints of sweet spices, vanilla and honey.
