Produced with the same passion and attention to detail reserved for Ornellaia, Le Serre Nuove dell’Ornellaia is a real “second vin”. A blend of Merlot, Cabernet Sauvignon, Cabernet Franc and Petit Verdot, which combines immediate pleasantness and taste-olfactory complexity with a proven aging potential.
Grapes: 44% Merlot 26% Cabernet Sauvignon 18% Petit Verdot 12% Cabernet Franc
Vinification: The harvest took place by hand in 15 kg crates and the bunches were selected on a double sorting table before and after destemming and subjected to a soft pressing at the end. Each variety and each parcel was vinified separately. Alcoholic fermentation took place in stainless steel vats at temperatures between 26-30 ° C for two weeks, followed by maceration for about 10-15 days. The malolactic fermentation began in steel vats, and ended after the transfer to barriques (25% new and 75% second passage). The wine remained in barriques in the Ornellaia cellar at a controlled temperature for a period of about 15 months. After the first 12 months, the assembly was carried out and then reintroduced into the barriques where it spent another 3 months. The wine remains in the bottle for six months before being launched on the market.
Tasting notes: Characterized by an intense color, the nose stands out the scent of ripe red fruits and spices. Rich and round, with a velvety tannic structure that covers the palate, this wine combines immediate pleasure and an extraordinary capacity for aging.
