Muffato della Sala is produced with botrytised grapes harvested in late October – early November, to allow the morning mists to favor the development of Botrytis Cinerea or “noble rot” on the bunches. This mold reduces the water content of grapes and concentrates sugars and aromas, giving the Muffato della Sala a harmonious and unmistakable taste.
Grapes: Chardonnay, Grechetto, Riesling Italico, Sauvignon and Sèmillon in equal parts
Vinification : The strictly manual harvest began towards the end of October with the Traminer and continued with the Riesling, the
Sauvignon and Sèmillon finish towards the end of November with Grechetto, returning more and more times to the same vineyard in relation to the presence of mold
noble on the single bunches After being transported to the cellar, the bunches were further selected on a sorting belt before being pressed. After pressing, the must ferments for 18 days at a temperature of about 17° C. The wine obtained, still sweet, was introduced into French oak barriques ( Alliers and Tronçais ) where it remained for about 6 months before being blended for a few months in vats. of steel before bottling.
Tasting notes : of a beautiful bright and intense golden yellow color, the nose shows ripe fruit, apricot and peach with citrus scents accompanied by delicate and elegant floral notes, and with iodized and saline hints. The taste confirms what is already perceived on the nose with a good balance, long persistence and great harmony.
