Vine varieties: Sauvignon Blanc 80%, Sémillon 20%
Vinification: The harvest began with the Sauvignon Blanc in the second ten days of August and ended with the Sémillon in mid-September. The bunches, harvested manually, were immediately transferred to the cellar and cooled by passing through a refrigerated conveyor which, by lowering the temperature before pressing, preserved the characteristic varietal aromas. After soft pressing, the musts, kept for a few hours at a temperature of 10°C so as to allow for natural clarification, were transferred to stainless steel tanks, where alcoholic fermentation took place at a temperature not exceeding 16°C. . Once this operation was completed, the wine was kept at a temperature of about 10 °C to prevent malolactic fermentation from taking place and to keep the organoleptic characteristics unaltered. The two varieties were then blended so that one could “complement” the other. Sauvignon Blanc is fresh, vertical, slightly aromatic, Sémillon is soft and tropical.
Tasting Notes: of a beautiful straw color with light greenish and golden reflections, the nose is intense with a complex bouquet composed of hints of lychee, pineapple and passion fruit and notes of grapefruit. In the mouth it is fresh and mineral with intense notes of pineapple and cedar peel. Long taste-olfactory persistence and harmonious finish.
