Manincor Moscato Giallo Alto Adige DOC
Manincor Moscato Giallo comes from vineyards in Mazzon di Caldaro, 350 m above sea level, located on steep slopes facing south with prolonged solar radiation and warm detrital soil formed by morainic deposits. Other vineyards in Vogelleiten above Manincor, in an extremely steep position with clayey soil mixed with limestone debris. The de-stemmed clusters remained to macerate for twelve hours in the press to draw aroma and structure from the skins. Fermentation took place in wooden barrels and steel tanks, partially spontaneously thanks to indigenous yeasts. During the five months of aging with the yeasts the aroma and taste were enhanced.
Grapes: 100% yellow Muscat
Tasting notes: Wine with a bright straw color and delicate aromas of nutmeg, essence of cedar and grapefruit. Fruity, intense, savory and with a persistent aroma on the palate.
Pairings: excellent aperitif wine, it goes well with Asian cuisine and savory hard cheeses.
