At Le Chiuse the Riserva has always been made, since the time of Tancredi Biondi-Santi, using the smallest bunches from the oldest vineyard, in order to obtain a wine with a character and personality such as to last over time. Giving time to a wine that asks for time. This is how bottle aging is extended from one to almost five years.
The result is a Reserve of greater balance and complexity that respects the expressiveness of the terrain.
Grapes: 100% Sangiovese
Vinification: The de-stemmed and crushed grapes fall into the steel tanks by gravity in the underground cellar without the use of a pump, here in thermo-controlled tanks of 50-80 hl fermented for 21 days at a temperature never above 29 ° C. After numerous decanting in steel tanks in spring it was placed in oak barrels with an average capacity of 30 hl where it remained for 4 years, then bottled in June 2015, after which a further refinement followed almost 5 years. The wine is finally ready in the tenth year after the harvest, hence its name “DIECIANNI”.
. Tasting notes: Color Intense and lively ruby red with garnet and cherry reflections. Distinct nose, of good finesse with hints of ripe berries, tobacco, leather in the foreground. The notes of officinal herbs, spices and minerals complete its great complexity, on the palate it is warm, savory, mellow, soft with a good body. the aromatic sensation of jam and spices remains pleasantly in the mouth for a long time.
Pairings: Roasted and stewed meats and game.
