Grapes: Trebbiano di Toscana, Malvasia and Sangiovese
Vinification : the grapes are harvested in mid-September and left to dry on racks until the beginning of January. Soft pressing is then carried out and the must is placed in small oak barrels, one or two hectoliters, with the “mother” (concentrated must from previous years). The wine remains to mature in sealed kegs for at least 3 years. At the end of this period, it is separated from the “mother” and left to age in smaller kegs of 0.65 hectoliters for about a year. Only at the end of this long process is it bottled and put on sale after a further year of aging.
Tasting Notes : a beautiful bright amber yellow color on the nose expresses hints of raisins, candied fruit and nuts with hints of chestnut honey. In the mouth it is broad, intense, sweet, with great persistence.
Pairings: perfect with panforte, excellent with dry pastries, also good as a meditation wine.
