This wine is the soul of Collemattoni production and represents the quintessence of the potential of the Sangiovese grape. The result is a wine of absolute elegance and class, the best representation of this prestigious wine-growing area.
Grapes: Sangiovese 100%
Vinification: removal of the stalks, soft pressing, fermentation in steel at a controlled temperature of 28 ° -30 ° C, maceration on the skins for about 20-25 days with an extraction technique made with delestage (one per week) and pumping over which are reduced during the process, followed by aging for a minimum of 30 months in 32 HL Slavonian oak barrels. This is followed by another 4 months of bottle aging.
Tasting notes: bright red color with typical garnet red reflections, intense on the nose with flavors of black berries, morello cherries and noble woods, in the mouth it is enveloping, dry and persistent.
