Col D’Orcia is a traditional producer of Brunello di Montalcino. The choice of continuing to use Slavonian oak barrels was made many years ago, well before the debate between modernist and traditionalist producers began. Tradition means respect for the essence of Sangiovese di Montalcino which lies in the potential for aging, in the improvement of the wine through its long stay in wood and the consequent aging in the bottle.
Vineyards: Sant’Angelo Hill overlooking the Orcia River, with a happy exposure to the South which allows it to be exposed to sunlight for the whole day. Average altitude 300 m a.s.l.
Grapes: Sangiovese 100%:
Vinification: Fermentation on the skins lasting 18-20 days, at a controlled temperature below 28 ° C, in low and wide 150 hl steel tanks, specially designed to extract effectively but gently tannins and color, followed by aging for 4 years, 3 of which in Allier and Slavonian oak barrels with a capacity of 25 – 50 and 75 hl and subsequent refinement in the bottle for at least 12 months in temperature-controlled rooms.
Tasting notes: with a ruby red color with garnet reflections, the scent is elegant and complex, with notes of red fruit, such as cherry and morello cherry, and spicy hints, the taste is structured and balanced, with pleasantly ripe tannins. It closes with a long, fruity and persistent finish.
Pairings: Game, roasted red meats and aged cheeses.
