At the Romitorio Castle the vineyard is processed completely by hand and the yields per hectare are very low. It is aged until the fifth year following the harvest, of which generally a minimum of 26 months in French oak Tonneaux and Slavonian oak barrels.
Grapes: 100% Sangiovese
Tasting notes: fresh and inviting nose with hints of red fruit, spicy notes of vanilla, cloves and licorice. Smooth tannin and excellent structure well supported by acidity. Final with a pleasant olfactory correspondence and surprising persistence.
Pairings: structured and composite dishes such as red meats and game, possibly accompanied by mushrooms. Excellent pairing with cheeses such as aged tome and Tuscan pecorino. Moreover, due to its characteristics, it is possible to appreciate it as a meditation wine.
