According to ancient maps, the name Cà del Pazzo derives from the locality now called Caparzo. This ancient denomination today gives its name to a wine that comes from a selection of grapes from our vineyards located in Caparzo and San Piero Caselle. Cà del Pazzo was produced for the first time in 1982 and can therefore be considered to all intents and purposes one of the first Supertuscans produced in the Brunello area. Produced only in the best vintages and in a limited number of bottles, it is intended for an audience of particularly trained enthusiasts.
Grapes: sangiovese 50%, cabernet sauvignon 50%
Vinification: separated for the different grapes with a duration of 6 days at 28-30 ° C followed by delestage and pumping over, spontaneous malolactic fermentation follows and part of the refinement is carried out in wood. < / p>
Tasting notes: with a very intense ruby red color, the nose releases a wide and distinct aroma, well pronounced with a clear fragrance of ripe blackberry and licorice root, with memories of cherry jam , white truffle, spices and vanilla, in the mouth it appears dry without harshness, warm, full and generous, austere but velvety, with an aristocratic base of toasted almonds; the sensation of aroma, clean and elegant, lingers for a long time and is delighted in the mouth.
Pairings: roasts, grilled meats, truffle dishes, mushrooms, aged cheeses, serving temperature 18 ° C, preferably uncorked 1 – 2 hours before serving.
