La Caduta is the name of a vineyard located south of Montalcino with an area of 7.5 hectares. Caparzo has decided to use part of this splendid vineyard to produce a cru of
Rosso di Montalcino.
Grape varieties: Sangiovese 100%
Vinification: after the manual harvesting of the grapes, fermentation lasts 7 days at a controlled temperature between 28 and 30 °C, followed by delestage and pumping over. Since the skins are particularly valuable, the period of contact with them is extended for another 10 days. Malolactic fermentation occurs spontaneously. Subsequently, part of the refinement takes place in wood and part in the bottle.
Tasting notes: Intense ruby red in colour, the nose is fine, complex, with a scent of vanilla and hints of small black berries. In the mouth it is warm, harmonious and persistent.
Pairing: excellent with soups, pasta and legumes, grilled, braised or stewed meats.
