The particular composition of the soil, clayey and calcareous with predominantly calcareous parts, gives Brovia Barolo a great balance both in the aromas and in the structure. Manual harvesting takes place in mid-October. Fermentation is carried out at a controlled temperature of about 28 ° C for a period of about 15 – 20 days. This is followed by the passage in large and medium-sized Slavonian and French oak barrels, which lasts about two years. Subsequently, the wine is bottled as soon as the aging period in oak is finished without any filtration practice. Refinement takes place in a place where temperature and humidity are constant, protected from artificial light and sunlight.
Grapes: 100% Nebbiolo
Tasting notes: The color is ruby red. The perfume is ethereal, with hints of dried fruit and withered flowers, the wine is structured with a remarkable body that makes it long-lived and suitable for long aging. The flavor is absolutely balanced and persistent on the palate.
Pairings: it pleasantly adapts to tasty and elaborate meat-based dishes, in these cases it can give unique and intense sensations.
